Winemaker’s Update – January

Icewine harvest is finally here! On January 3rd we commenced the picking of Showcase Cabernet Franc and the quality looks amazing. With the warmer than expected early winter, the grapes were fairly dehydrated so there is amazing flavour concentration, much like 2010.
We are holding a blending session on Jan 16th for all the Trius early 2011 aromatics such as Sauvignon Blanc, Pinot Grigio, Riesling and Gewürztraminer.  We should then start bottling in February for an early Spring release. Speaking of bottling, 3000 cases of the Trius Red 2010 werecompleted before Christmas.  Wow, what a wine and well worth the wait let me tell you. Could be our best EVER!
Pruning in the vineyards has commenced and the vines are all dormant and look very healthy for vintage 2012.
Cheers,
Craig McDonald, Winemaker

New Beginnings, Old Favourites

It’s official, the days are now getting longer.  As soon as the winter solstice passes, I always feel a small wave of optimism.  Of course, there’s the holidays with “good cheer” in the air, but for some reason there tends to be stress that goes with it.  Obligations, endless feasting and let’s not forget the shopping.  It’s the days leading up to New Year’s that I find sunnier; the idea of new possibilities and a fresh start.  I think it’s this feeling that leads us to raise a glass of something sparkling, as we toast to an old year and welcome the new.

But Sparkling wine is also extremely food friendly, and can (and should) be enjoyed throughout the year.  Those little bubbles cut through the richness of foods like cheese, pureed soups, or anything that’s been fried, and leaves a refreshing aftertaste. Trius Brut is your classic, but why not try something new?  Our Showcase Sauvignon Blanc Sparkling 2009 was recently released and has a gorgeous nose of key lime, bartlett pear and biscuit.  Beautiful for both sipping and having with your favourite foods.  Elegant, smooth, and still only half the price of Champagne.

And it’s not just sparkling that should get the limelight. Warming whites and velvety reds are perfect for this time of year.  For whites, I recommend an oaked Chardonnay.  It’s not served cold, plus the creaminess from the oak is very comforting when you’re sitting by the fire.  Instead of your classic choice, try one of our Showcase Single Barrel Chardonnays.  Our winemaker has taken a vineyard of Chardonnay from one vintage, fermented it, then divided it into different barrels.  These can differ from forests the oak originated from, the cooper, even the toast level of the barrel.  My heart has always been loyal to #7161, but try a few for yourself and pick your favourite.

For reds, you’ll always be spoiled with our 2010 Bordeaux reds.  Right now we have Trius Merlot, Cabernet Franc and Cabernet Sauvignon.  Three big hits that are full bodied, structured and well priced.  But given that Hillebrand Winery has some legacy, try a back vintage next time.  We still have some gorgeous 2004’s and 2006’s whose tannins are seductively smooth and fruit that is dried with a warm spice to it.

So next time you go for a glass of wine, try something different.  It’s a new year after all.
Cheers,
Kristina Inman, Estate Sommelier

Winemaker’s Update

So harvest is finally over at Hillebrand Winery. All the remaining reds have been pressed off and look really sharp. The Aromatics are being put to bed for Christmas and await our final blending session in mid January. Just wait and see!

The new 2010 Trius Red is nearly assembled and the first bottling is coming soon. It looks amazing and we will be putting the finishing touches to it this week. Could be our best ever, all 12,000 cases of it!

The vineyards have hardened-off really well (meaning the sap is all the way down to the roots for winter) and they are having a well earned rest after producing such amazing grapes this year. And now, Icewine to finish off, which MAY happen before Christmas but likely early January. The good times never end!

Cheers,
Craig

The Underdog

“Difficult”. “Mr. Sensitive”. “Heart break”. Not exactly the most complimentary descriptors. It’s not easy being the one on the block that’s snuffed at for its high-maintenance nature.  Pinot Noir is a grape that is constantly being talked about, yet half the time people focus on the arduous struggle winemakers go through just to get a successful vintage. Yes, it is a little more difficult to grow. It has a thin and delicate skin which can be detrimental in dramatic climates. The bunches hang tightly together which can be an issue when it’s humid and rot is likely to damage them. However, the rewards that Pinot Noir offers when the conditions are ideal can overshadow even the harshest critic.

Icewine Martini Recipes

At Hillebrand Buyers’ Weekend, our Retail Manager and Estate Sommelier Kristina Inman and Restaurant Manager Piero Pastorelli hosted a seminar called “Wine Unmasked”. One of the highlights of the seminar was the Apple Pie Icewine Martini that Piero made for everyone to try. We promised we’d post that recipe along with some of Piero’s favourites on our blog. Check them out!

Harvest Update

As of October 4th, Hillebrand is officially one third of the way through Harvest. Despite the rains, the Winemaking Team is dodging bullets well and all the fruit that has been picked thus far has been better than expected. Sauvignon Blanc has been showing extremely well and the new Trius 2011 looks really sharp as it bubbles away in tank (and a few French barrels).

Just finishing up Pinot Grigio and getting into Chardonnay and Riesling now with the last pick of Pinot Noir from Clark Farm scheduled for Wednesday Oct 5th. Gewurz is holding really well too and shows excellent potential.

Two weeks of sunny dry weather means we are in good shape for the reds. Merlot already at 22+ brix and again should be the star of the show this vintage. I’m pretty pumped with what I’ve seen so far!

Cheers,
Craig.

Winemaker’s Update

We are nearly finished pressing Pinot Noir for Trius Brut and are just starting Chardonnay. Harvest is here!

Hillebrand Pinot Noir

Our new Pinot Noir vines are growing well and look very healthy. Weeds have been removed around the young vines to keep them disease free and to give them every opportunity to grow as high as possible in their first year.

Here we can see the new trellis that has been put in. You can see the 3 sets of 2 wires (called catch-wires). To train the vines to grow straight and hold them vertical.

Our Sauvignon Blanc looks great. Leaves have been gently plucked around the fruit zone but not completely. We want a little shade during the warmer days to prevent sunburn on their delicate skin but also need sunlight on the skins to develop those tropical flavours. A fine balancing act indeed.

Our Showcase ‘Clark Farm’ Pinot Noir.
This vineyard looks spectacular! I think this could be our best yet as the vines seem perfectly balanced and the ripening is coming along nicely. Notice how the bird netting is installed on both sides of the vine. Birds love our Pinot and this is the only way to ensure good clean fruit and to keep the little buggers at bay!

Stay tuned, Craig.
