Hillebrand Winery Restaurant celebrates the relationship between our land, our people, our wines and our food.  Chef Frank Dodd showcases locally inspired cuisine made with ingredients from the bounty of Niagara Wine Country and Winemaker Darryl Brooker pairs them with wines made from grapes that grow in the same soil.

Open daily for lunch from 11:30 am to 2:45 pm and dinner from 5:30 pm to 9 pm.  Reservations are recommended.  While you are dining with us why not join in on one of our Winery Experiences

 


Frank Dodd, Chef

Since Frank’s graduation in 1991 from Durham College where he took his apprenticeship, he has never stepped foot out of the kitchen.  It is his true passion in life and it shows through this meticulous attention to detail in the kitchen.  Working at some of the world’s finest dining establishments including: The Savoy and Dorchester Hotels in London as well as Cliveden Hotel, one of Britain’s finest country houses.  Since coming to Canada in 2000, he has worked at Biff’s, Vancouver’s Wedgwood Hotel, and Langdon Hall before taking the Executive Chef position at Hillebrand Winery Restaurant.

Chef Dodd has a passion to focus on the finest seasonal ingredients and strives to produce innovative seasonally-inspired menus that enhance Winemaker Darryl Brooker’s wines.

At Hillebrand Winery Restaurant we believe that every dish we serve should have a story.  This is why Chef Frank Dodd is so committed to using only local ingredients and fostering relationships with the individuals who produce them.  This dining experience begins with an intimate Kitchen Reception, where you will tour Chef Dodd’s fridges full of the freshest local ingredients.  This is followed by a grower hosted tasting menu.  Each course will feature the ingredients they are so committed to producing.  Dinner will be served alongside Hillebrand wines and discussion about where the food has come from and how it was produced.
